Basmati Rice with Cashew Nuts and Curry Leaves

I do like to spruce up plain old rice sometimes. Makes for something a little different! This is a really simple way to bring a bit of joy to what can otherwise be a little bland.

INGREDIENTS:
1 cup basmati rice
1/2 cup unsalted cashew nuts (roughly chopped)
10-12 fresh curry leaves
2 tablespoons ghee or unsalted butter

DIRECTIONS:
Bring two cups of water to a boil in a heavy based pan – pour in the rice, shake the pan once to spread it evenly. Don’t stir it!! Reduce the heat to very low, cover the pan and leave for 10 minutes to gently cook. Check to see all the water has been absorbed then remove from the heat.

Cover the pan with a dry tea towel and return the lid. Leave for 15 minutes.

Heat the ghee in a small pan until just hot, add the curry leaves and cashew nuts and stir fry for 1-2 minutes until the nuts are lightly browned.

Pour the nuts and the ghee over the rice and gently fluff up the rice with two forks.

SERVING:
This curry is great served with fish curries but works with any Indian dish to be honest.
