This is great to add a little lift to your BBQ and works equally well for meat, fish and even vegetables. Make sure you prepare it well in advance as whatever you’re marinating benefits greatly the longer you leave it.
2 garlic cloves (chopped)
2 teaspoons cumin powder
1 lemon (juice of)
1/2 tablespoon red wine vinegar
1 teaspoon sweet paprika
8 tablespoons fresh coriander (chopped)
2 tablespoons extra virgin olive oil
salt & pepper
Blend to a smooth paste all the ingredients either in a pestle & mortar if you’re up for the slog, or with a hand blender/food processor. Rub over the meat/fish/veggies and leave to do it’s magic, covered in the fridge for anywhere between 30 minutes to 4 hours
Grilled or BBQd with salad, cous cous etc.
