Green Beans with Mint & Dill

This was deilcious and incredibly simple way to dress up green beans. I loved the combination of mint and dill. I also loved that this dish was served at room temperature. It meant I didn’t have to fart about at the last minute clattering pans to have everything ready at the same time. Easy, tasty food.

400g green beans
½ cup fresh mint
¼ cup fresh dill
1 garlic clove
salt & pepper
2 tablespoons extra virgin olive oil
1 lime (juice of)
1 tomato (seeded and finely diced)

Steam the beans until just soft, but with a bit of bite (about 6-8 minutes). Plunge into ice water to stop from cooking any further.

Place the garlic, mint, dill, salt and pepper and pound into a smooth paste. Squeeze in the lime juice and pour in the olive oil and stir well.

Drain the beans and tumble into a large bowl. Mix in the tomato then pour the dressing over and toss well. Cover and leave for 30 minutes to develop in flavour.

Serve at room temperature alongside anything you like!
