After visiting the South of the USA recently, I bought myself a copy of Dolly Parton’s cookbook from her fun-packed theme park, Dollywood. In it appeared a recipe for Coca-Cola chicken – I’d long been familiar with the use of soft drinks in cookery, but had never ventured to try it myself. However, a trip to the Snowy Mountains in Australia to stay in a very remote mountain cabin provided the perfect opportunity for a Tennessee mountain weekend of honest hillbilly food. The original recipe called for a can of Coke, but to make it even more Tennessee, we opted for a mixer can of Jack Daniels & Coke! The results were astounding! I kid you not – it was delicious! If you’re up for it – I strongly recommend you giving this a go.
1 medium chicken
1 can Jack Daniels & Coke (or 1 can Coke)
2 tablespoons tomato ketchup
salt & pepper
Preheat oven to 180ºC.
Place chicken in a roasting tin and season well with salt & pepper. Pour over the JD&Coke then spoon over the ketchup. Bake in oven for 2 hours, basting the chicken with the juices every 10 minutes.
Remove from the oven and cool. Then carve the chicken up. I tossed mine with the remaining juices in the tin and served.
I served mine with some freshly made biscuit and some kale.
