A delicious Italian salad that’s always been one of my favourites, I think it’s the bread that does it. It’s beyond simple to prepare.

RECIPE:

INGREDIENTS:

1 garlic clove (peeled & cut in 1/2)
1 ciabatta loaf
6 ripe tomatoes
1 small yellow capsicum (seeded)
1/2 cucumber peeled
1/2 white onion
2 tablespoons basil leaved (chopped)
80ml olive oil
2 tablespoons red wine vinegar

DIRECTIONS:
Rub the garlic around the inside of the bowl you’ll be serving in. Cut the crusts off the bread and cut into cubes. Sprinkle with a little water, enough to moisten it. Cut the tomatoes and cucumber into chunks and then dice the onion, combine with the bread and basil and drizzle over the olive oil and vinegar. Toss well and leave for 30 minutes before serving.

SERVING:
Whatever you’d want to serve a salad with.
