Pork Chops with Fava, Tomato & Mint Sauce

I can’t quite begin to tell you how fantastic this is. Pork is a favourite of the Spanish and it’s easy to see why when they accompany it with such delicious ingredients. Be sure to get good quality pork chops. Organic pork has the edge, and as much as it kills me to pay the extra, it’s worth it. It’s worth doing the pork on the BBQ, even if it means I’ll come back into the house with 300 mosquito bites.

Serves 2



2 large organic pork chops
3/4 cup shelled fava beans
1 tablespoon olive oil
1/2 onion (chopped)
1 garlic clove (chopped)
70g chorizo (chopped)
15g pancetta
4 tablespoons white wine
200g canned tomatoes (chopped)
1/2 cup fresh mint (chopped)
salt & pepper

Boil the fava beans until tender. Drain and cool with cold water. Pop the beans out of their green shells. Heat the oil in a large pan over a moderate heat and cook the onion slowly for anout 8-10 minutes until browned and soft. Reduce the heat to low addd the chorizo, pancetta and garlic and continue cooking for another 7 minutes. Add the white wine and cook for a minute. Add the tomato sauce, fava beans a little salt and pepper. Leave to simmer gently for 4-5 minutes. Remove from the heat and stir through the mint.
Cook the pork under a hot grill or on the barbecue until charred.

Spoon the sauce over the chops and serve with salad or vegetables.
