This is a simple simple side dish which is pretty substantail in its own right. I ate it with a pork cutlet but I imagine it’ll work with whatever you can dream up. The chorizo soaks into the potatoes which creates something so simple yet so sublime. It’s a dish you can serve hot or cold.
6 medium potatoes (unpeeled and cut into 1cm slices or 2cm cubes – up to you)
1 spicy chorizo sausage (normal if you can’t find spicy) (diced into 1cm cubes)
1 small onion (finely sliced)
1 clove garlic (finely chopped)
salt & Pepper
1 tablespoon fresh parsley (very finely chopped)
4 tablespoons olive oil
In a large frying pan (with a tight fitting lid) heat the oil over a medium heat. Add the onions and chorizo, fry for 1 minute. Now add the potatoes and garlic and fry for a further minute. Add a good dash of salt & pepper, turn the heat to the very low and pop on the lid. Leave for 25 minutes or until the potatoes are tender, carefully stirring every 10 minutes. Remove from the heat.
Gently stir in or sprinkle the parsley and serve.
Like I said, I had a pork chop which was delicious but I’m sure it would work with other meats, or even with just some bread. It also works at room temperature as a cold tapas dish, with some olive oil drizzled over it.
