Prawns Marinated in Ginger & Lime

This is a lovely fresh marinade for prawns. All you need to do is stick it in the fridge and when you’re ready chuck the prawns on the BBQ. Delicious.

RECIPE:

INGREDIENTS:
250g King prawns (shell off, tails on, devieined)
1 tablespoon honey
1 tablespoon light soy sauce
1 tablespoon dry sherry
2 garlic cloves (crushed into puree)
1 teaspoon crushed ginger
1 lime (juice of)
salt & pepper

DIRECTIONS:
Combine all the ingredients and leave the prawns in the fridge for 1-2 hours. Heat the BBQ or Grill to hot. Place the prawns on the heat for 4-5 minutes until speckeled with charred bits. Serve hot!

SERVING:
Serve as they are OR combine with 1/2 small cucumber (seeded and diced), 1 tablespoon vegetable oil, 1 tablespoon sesame oil, 2 tablespoons fresh coriander (chopped) and 4 spring onions (finely chopped).
