These were something I used to whip up before I hit the town back in Edinburgh. Gone are those days, but these muffin garlic treats still get an outing once in a while. They’re very very easy!
RECIPE: (makes 12)
6 round muffins (halved)
60g unsalted butter
3 garlic cloves (minced)
1 tablespoon fresh basil (finely chopped)
1 teaspoon dried thyme
1/2 teaspoon dried oregano
200g mozarella cheese (coarsely grated)
50g parmesan (finely grated)
6 slices danish salami (round) *optional
salt & pepper
Mix the butter with the minced garlic, parsley, thyme and oregano and set aside.
Toast the muffins on both sides lightly. Now divide the butter between the 12 muffins slices and spread evenly over the entire surface. Add a slice of salami to half of them (if using), then top with some mozzarella, then a sprinkling of parmesan and salt & pepper.
Toast under a hot grill for 4-5 minutes until the cheese bubbles and browns.
