Simple Spanish Marinade for BBQ Lamb


This is beyond simple. Even an idiot could do it. It’ll take you 2 minutes yet it will make all the difference to the taste of the meat once cooked. I have been known to get up early of a morning and prepare the meat this way before I go to work…. pop it in the fridge, then it’s all ready to go once I manage to drag myself away from my desk (a pretty easy task).



2 garlic cloves (mashed with 1/2 teaspoon salt)
1 teaspoon sweet paprika (Spanish if possible)
2 tablespoons red wine vinegar
2 tablespoons fresh thyme (chopped)
2 tablespoons extra virgin olive oil

Combine all the ingredients well and in a large plastic bag add the lamb cutlets/chops/blah blah blah… Pop in the fridge for at least a hour and up to 24 hours.
Cook on BBQ to your liking. Alternately, you can cook under the grill.

Sprinkle with fresh thyme or parsley, however you see fit really. Nice with THIS salad or with THIS rice or indeed some lovely Spanish Potatoes with Chorizo. Feel free to experiment.
