Spaghettini with Olive Oil, Garlic & Chilli


If you don’t want ANY fuss, but you want plenty of taste and you don’t mind smelling like a monster for a few hours, then I urge you to try this. It couldn’t be easier and it’s really gorgeous. (serves 2 greedy people)


Spaghettini for 2 (about 225g)
75ml extra virgin olive oil
3 garlic cloves (very finely chopped)
1 teaspoon chilli flakes
1/2 tablespoon fresh parsley (very finely chopped)
salt & pepper

Bring to the boil a large pan 3/4 full of salted water and then add the pasta. Cook for as long as it says on the packet.
Meanwhile, in a large frying pan (big enough to hold the pasta when it’s ready) add the oil, garlic, chillies and parsley. When the pasta is almost ready turn on the heat to low and when the ingredients begin to lightly sizzle cook for 1 minute. Remove from the heat.
Take a ladleful of the pasta liquid and retain it, drain the pasta, and stir into the frying pan oil, making sure everything’s coated. Put in a couple of tablepspoons of the liquid and stir in well. THAT’S IT.

Simply on its own with some nice bread. You can have a bit of parmesan cheese if you like but it’s not really that neccessary.
