Spanish Eggs

I woke up this morning thinking about eggs! I kid you not – I was actually dreaming about cooking fried eggs for my breakfast. I’d been watching some cookery show where the (rather annoying) presenter was wandering around Barcelona eating this and that. One of the things she tried had a fried egg on it. and for some reason – fried eggs stuck in my subconscious mind. So, bleary eyed, I stumbled into the kitchen and created this Spanish inspired dish. Sweet tomatoes, smoked paprika and deliciously runny yolks made this a perfect for dunking crusty bread and a fabulous start to the day. It’s beyond simple, but incredibly tasty. Quite literally a dream.

1 tablespoon extra virgin olive oil
1 medium tomato (sliced)
1/4 teaspoon Spanish smoked paprika
salt & freshly ground black pepper
2 large free range eggs

Preheat a grill to high.

Heat the oil in a small (non-stick) frying pan over a moderate heat until hot. Arrange the tomato slices in one layer in the pan. Cook for 1 minute then flip and cook for another 1 minute. Sprinkle over the paprika and then break over the eggs. Give the pan a gentle shake to distribute the egg evenly and let them cook for 1 minute. Season with plenty of salt & pepper then place the whole pan under the grill. Cook for about 2-3 minutes or until the whites have set, but the yolks are still runny.

Either eat them directly from the pan or slide carefully onto a plate.
