Sometimes the simplest dishes are the best. Prawns and garlic work amazingly well together, especially with a little dash of white wine and a drizzling of good quality olive oil. Perfect for a summer’s afternoon in the garden. When I made this I ate SO many prawns I had to have a little lie down to sleep them off. I wish I wasn’t so greedy sometimes.
2 tablespoons olive oil
500g king prawns (shelled & deveined)
1 hot red chilli (very finely chopped)
4 cloves garlic (peeled and minced)
3/4 cup white wine
1/2 teaspoon salt
2 tablespoons fresh flat-leaf parsley (finely chopped)
3 tablespoons extra virgin olive oil
Heat the olive oil in a large frying pan until hot. Add the prawns, garlic, chilli, salt and pepper and stir fry for 2-3 minutes until pink. Add the wine and let it sizzle off all the alcohol and reduce by half (about 1-2 minutes). Remove from the heat and drizzle over the extra virgin olive oil. Serve immediately.
Sprinkle over the parsley and serve with a few lemon wedges and plenty of bread to soak up the juices.
