Steak with Roquefort Sauce

I love blue cheese and I especially love the pungent taste of a roquefort sauce. It works excellently with meat, especially a good quality steak, which is just what I needed today. I was salivating at the mere thought of this all day, so when it came time to cook I couldn’t wait any longer. I served mine with some delicious potatoes roasted in duck fat which just upped the ante, making it quite a decadent evening all round.

250g roquefort blue cheese (or similar variety)
2 cloves garlic (finely chopped)
2 tablespoons fino sherry
pinch sweet paprika
freshly ground black pepper

4 steaks (your choice)
salt & pepper
2 tablespoons butter (unsalted)

Heat all the ingredients over a low heat along with 1/4 cup water in a small saucepan until the cheese has melted. Simmer for 3-4 minutes until thickened slightly.

Meanwhile season the steaks with salt & pepper and cook over a medium/high heat in a frying pan for 4-5 minutes per side depending on thickness and how you like them cooked. (This timing will give you a medium cooked steak).

Rest the meat for 1-2 minutes then serve:

Serve the steak with the sauce poured over or on the side, alongside vegetables, salad etc.
