This is a nice, refreshing desert. You can have it on its own or with some ice cream. Who knew Strawberries and orange went so well together? Who cared? Try it.
2 large oranges
450g fresh strawberries
60g caster sugar
1 lemon (juice of)
5 tablespoons sweet desert wine
Peel the oranges to the flesh with a knife. Cut into thin slices and then in half. place in a large bowl. Cut the strawberries into bitesize pieces and place in bowl, toss lighlty.
Put the sugar and 120ml water into a saucepan and heat over a medium temperature until the sugar has dissolved. Raise the heat and boil for 5 minutes. Remove from heat and cool. Add the lemon juice and the wine to the syrup and pour over the fruit. Cover and leave in fridge for no longer than an hour (the strawberries will go a bit manky if you leave them too long).
Sprinkled with fresh chopped mint and either on their own or with some ice cream, cream etc.
TIP: Prepare the fruit and syrup before hand. Either when your guests arrive or when you serve your starter, pour over the syrup, that way it doesn’t sit too long in the juice before serving.
