Tandoori Fish

Yum Yum! This is fabulous and healthy. It’s a simple marinade made for fish. It just goes under the grill!! What could be easier? I tried this thinking I knew what I was in store for, but I was amazed just how delicious it really was. Great for dinner parties as you can pre marinade the fish and stick it in the fridge. Plenty of time left to clean the toilet and have a wash before your guests arrive!

RECIPE: (serves 2)

2 x 200-250g salmon fillets (skin off)
1 teaspoon lemon juice
1 garlic clove (minced)
1 teaspoon ginger (minced)
1/2 teaspoon garam masala
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
freshly ground black pepper
1 tablespoon natural yoghurt
1 tablespoon peanut oil

In a small bowl, combine the lemon juice, garlic, ginger, garam masala, cumin, cayenne pepper, salt and pepper. Rub this mixture into the fish fillets then coat with the yoghurt. Cover and leave at room temperature for 30 minutes to marinade.

Heat the grill till it’s very hot, brush the peanut oil over the fillets then cook under the grill for 3 minutes, turn, brush again with a little oil and cook for another 3-4 minutes – until browned on top.

Serve with a lemon wedge, salad, and mint raita on the side. Healthy!
