Here’s a simple marinade that works equally well for either chicken, lamb or fish. I make it periodically and it’s a simple way to spruce up a bit of chicken in a salad, or fantastic with prawns on the BBQ. It’s up to you really. If you want to go all out and make it look very colourful, then use the food colouring. If not leave it out, it doesn’t affect the taste in the slightest).
1 cup yoghurt
1/2 lemon (juice of)
1 teaspoon red chilli (very finely chopped)
1 tablespoon fresh ginger (grated)
3 tablespoons onion (grated)
1 tablespoon garam masala
1/4 cup vegetable oil
1 teaspoon red food colouring (optional)
Simple. Combine all the ingredients together. Coat the meat or fish and leave for a few hours, preferrably overnight to get the best results. Cook as you wish.
