It doesn’t come more Italian than this. It’s the simplest salad to make, yet it is one of the most impressive ever. The colours of the Italian flag, this salad is uniform in its arrangement of red white and green. The flavours are Italian through and through too with the beautifully fragrant basil alongside sweet tomatoes and creamy buffalo mozzarella. It’s one of my favourites.
1 large buffalo mozzarella
2 ripe ox heart tomatoes
1 roma tomato
small bunch basil
2 tablespoons white wine vinegar
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
salt & pepper
Slice the mozzarella into 1cm slices, the slice the tomatoes into 1cm slices. Arrange the salad in a circular motion on a large platter by placing a slice of tomato then mozzarella then a basil leaf. Repeat this process until you run out of ingredients or plate. Mix together the vinegar, lemon juice, olive oil and salt & pepper and pour evenly over the salad. Leave for 5 minutes to develop in flavour then serve.
This makes a great accompaniment to fish, poultry or meat and works brilliantly as a light starter too.
