Turkish Meze – Spoon Salad

Spoon salad refers to the salad’s consistency – almost like a Mexican salsa – best served with a spoon. The ingredients are chopped into perfect tiny dice and combined to form a jewel like appearance. It’s a lovely, fresh salad with a little kick of spice at the end. Delicious stuff.

INGREDIENTS:
1 small cucumber (peeled, seeded and very thinly diced)
1 red capsicum (seeded and very thinly diced)
2 long red chillies (seeded and very thinly diced)
1 shallot (very thinly diced)
2 tomatoes (seeded and very thinly diced)
2 tablespoons fresh parsley (finely chopped)
1 tablespoon fresh mint (finely chopped)
1 tablespoon red wine vinegar
1 tablespoon Turkish red pepper paste (or tomato pasata mixed with 1/4 teaspoon chilli powder)
1 teaspoon pomegranate molasses (or 1 teaspoon sugar)
1/2 lemon (juice of)

DIRECTIONS:
Combine all the ingredients then leave for at least 30 minutes to develop in flavour.

SERVING:
Great with grilled meat or fish.
