The perfect dish for all seasons. Great for a summer’s day while perfectly warming for a cold winter’s evening. This Spanish inspired warm salad is very simple to put together and when the tart dressing soaks into the potatoes it’s a really delicious combination of flavours. It’s a dish that looks more complex than it really is, which is a bonus if you like a bit of adoration but are a little bit lazy.
500g potatoes (cut into even chunks)
1 red capsicum (cut into small slices or chunks)
1/2 red onion (thinly sliced)
1/2 chorizo sausage (thinly sliced)
1/2 cup fresh flat-leaf parsley (chopped)
1 garlic clove
3 tablespoons olive oil
1 tablespoon red wine vinegar
salt & pepper
Boil the potatoes for 10-20 minutes until tender. Drain and cover.
Crush the garlic clove with a little salt into a paste. Whisk in the olive oil, vinegar and a little pepper and set aside. In a small dry frying pan, fry the chorizo for 2-3 minutes until just crispy. Add to a large bowl then add the capsicum, onion, parsley and potatoes. Drizzle over the dressing and lightly toss together. Serve immediately or leave to come to room temperature.
Perfect just on its own, but great to accompany fish or poultry.
