I’m a big fan of watermelon. So juicy, refreshing and tasty! It’s not really an ingredient that lends itself to many applications other than slicing and eating, but there is one dish that puts this tasty fruit to excellent use. Watermelon, like other melons has a kind of savoury sweet taste, so it’s not too sweet to work in a salad. When paired with salty feta cheese and sharp, sweet red onion it creates a delicious, summery salad that’s a little out of the ordinary.
INGREDIENTS: (serves 4)
3 cups cubed watermelon
1 small red onion (thinly sliced)
1 cup feta cheese (roughly crumbled)
2 tablespoons fresh mint (roughly chopped)
1 tablespoon fresh flat-leaf parsley (chopped)
salt & freshly ground black pepper
3 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
Combine all the ingredients together in a large bowl and toss gently to incorporate everything. Leave for 5-10 minutes to let all the flavours meld then serve.
I served mine with salmon, but this salad would work well with any kind of seafood or poultry, lamb or even game birds like duck.
